¾ pounds apples, peeled and chopped fine
¾ cups dark brown sugar
½ pound currents
1 pound dark and light raisins
6 ounces mixed citron peel
grated rind of 1 lemon
5 tablespoons lemon juice
½ teaspoon cinnamon
½ teaspoon allspice
¼ teaspoon nutmeg
¼ teaspoon mace
½ cup brandy
Combine ingredients in a large bowl and stir thoroughly. Place in sterile mason jars and seal. Processing is not necessary.
Prepare pastry dough using 4 cups of flour to 1 cup butter. Preheat oven to 400 ℉. Line small foil cups with pastry and fill completely. Top each tart with a star-shaped piece of pastry. Bake for 15 minutes.
