1 pound potatoes (preferably Yukon gold, but anything will do in a pinch!)
¼ cup olive oil
Possible seasonings: garlic salt, smoked sweet paprika, your favourite flavoured sea salt
Cast iron skillet
Slice or halve potatoes, depending on size (they should definitely be wedges, not fingers). Marinate in seasoning of your choice and half the olive oil.
Heat olive oil in skillet on a medium burner. When it begins to smoke, add potatoes, making sure to scrape in all the marinade. Stir frequently to prevent sticking, and cook until frites are crisp. This could take 20 minutes or longer, depending on the potatoes and the burner. Place on table in serving bowl, for diners to smell, admire, and consume!
