Palak paneer

500 grams frozen chopped spinach
¼ teaspoon whole cumin seed
1 medium onion chopped
⅛ teaspoon cinnamon
¾  teaspoon chili powder
2–3 whole cloves
3–4 cloves garlic, minced
1 inch ginger root, peeled and minced
250 grams paneer (or 
extra firm tofu)

Steam spinach in a little water until cooked. Drain and puree.

Heat a small amount of cooking oil in a saucepan. Sauté cumin, onion, garlic, ginger, cinnamon, chili, and cloves. Sauté for a few minutes until onions are cooked. Add pureed spinach, a little water, and sea salt to taste. Stir in paneer or tofu and cook for five minutes.

The longer this dish sits before eating,the tastier it will be! Heat and serve.
