1 ¾ litres vodka

peels of 3–5 lemons, yellow part only; use the freshest lemons possible

Put vodka and lemon peel into jar, close, and leave for one month.

											4 cups water

											3 ½ cups sugar

											1 teaspoon lemon juice

Make syrup with water, sugar, and lemon juice. Simmer over medium heat until reduced by half (about 1 hour). Cool completely.
Combine lemon alcohol with syrup. Strain through cheesecloth into bottles, and store in cool dark liquor closet. The longer it “ages”, the more mellow and integrated the flavour. When ready to serve, it should be kept in the freezer for optimal chill factor. Keep the glasses there, too!
