350 grams beef seitan, thinly sliced
olive oil
3 cloves garlic, minced
1 onion, diced
1 yellow pepper, diced
pepper
1/2 teaspoon cumin
1/2 teaspoon oregano
1 bay leaf
1 cup stock
1 cup tomato sauce
Brown seitan in olive oil over medium heat and set aside.
In caste iron casserole, sauté garlic, onion, and pepper in olive oil until translucent. Add the rest of the ingredients and simmer over low heat until seitan is tender, stirring occasionally to prevent sticking, 15-20 minutes. Add liquid if needed. Serve with rice.
