Crispy Cuban Pork

6 large cloves garlic
1 teaspoon dried oregano
1 teaspoon cumin
1 teaspoon salt
1/3 cup lime juice
1/4 cup olive oil
1 pound pork seitan, cut in strips
oil for frying
tropical fruit salsa

Prepare marinade using garlic, oregano, cumin, salt, lime juice, and olive oil. Marinate seitan strips for an hour or so before frying. 

Heat oil on medium-high. Fry seitan strips in batches, shaking off excess marinade before putting in pan. Strips should be crisp but not burnt. When ready to eat, toss remainder of marinade over seitan. Serve with mango or pineapple salsa, alongside rice and frijoles negros
