¾ pound potatoes, diced
¼ cup cooking oil
curry paste
1 teaspoon coriander
1 teaspoon chili powder
1 teaspoon garam masala
1 teaspoon salt
½ teaspoons turmeric
1 teaspoon garlic pulp
3 tablespoons tomato paste
1 tablespoons lemon juice
⅛ cup cooking oil
2 onions, diced
¾ cup peas
Heat cooking oil in cast iron pan. Add potatoes and stir-fry until crisp. Set aside. Combine curry ingredients in a bowl and mix thoroughly. Set aside. Heat cooking oil in large saucepan. Add onions and cook until golden. Stir in curry paste and stir fry for about three minutes. Add potatoes and stir mixture thoroughly. This can be covered and set aside, and reheated when ready to serve. Serve with rice, and your Indian condiments of choice.
