Classic shortbread cookies

½ pound butter
½ cup sugar
2 cups flour

Purée butter and sugar. Blend in 2 cups of flour and knead until smooth. Chill for 1 hour, then roll out, ⅛ to ¼ inch thick. Cut into shapes and place on cookie sheet. Sprinkle with coloured sugar. Bake at 300° F. for 12–15 minutes.
