1 1/2 cups vital wheat gluten
1/2 cup chickpea flour
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon sweet smoked paprika
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon ground clove
4 tablespoons oil
2 tablespoons liquid smoke
1 tablespoon maple syrup
1 teaspoon bouillon paste
1/2 cup pineapple juice
top with water to 1 1/2 cups total liquid
For glaze:
1 tablespoon maple syrup
1 tablespoon molasses
1 tablespoon Dijon mustard
2 tablespoons pineapple juice
1/2 teaspoon liquid smoke
1 teaspoon whole cloves
Use regular seitan technique to make dough. Shape into a single oval loaf and wrap in foil. Cook in 350F oven for 50 minutes. Remove from oven and leave in foil for 30 minutes more. Unwrap and place on roasting rack. Lightly score in diamond pattern and return to oven for a further 2o minutes.
Raise oven temperature to 400F. Apply glaze to ham and roast for 15-20 minutes.
