In our home, the "appetizer" is more than simply the first course of a meal. This snack, which could be as simple as a dish of olives or as hearty as bread and hummus, implies an atmosphere. It is something with which to welcome guests, to nibble with drinks while dinner is cooking. It is something to put on the table with a glass of wine at the end of the day, to ease the transition between the working environment and the evening meal. It can be a hearty snack for a weekend afternoon, accompanied perhaps by beer or wine, to be enjoyed on a sunny patio or in a cozy kitchen. Pull up a chair, turn on some music, and enjoy!
