Black bean burritos

grapeseed oil
1 large onion, chopped fine

½ zucchini, chopped in very small cubes

Choose from:
1 jalapeño, de-seeded and finely chopped
1 chipotle chile with adobo sauce, finely chopped
1–1½ tablespoons chile powder (fresh)


½–1 cup strong vegetable stock
½ cup black beans (cooked)

0–1 ½ teaspoons sea salt (only if required)

flour tortillas

Monterey Jack or cheddar cheese, coarsely grated
sour cream
fresh salsa

Sautée onions in oil. Add zucchini and choice of heat, cooking more. Add black beans and stock, simmering until thick and delicious.

Steam tortillas, add black bean mixture, and top with desired condiments.
