Makes one medium sized boneless ham.
400 grams pressed tofu
1 cup veggie stock
1/4 cup olive oil
1 tsp liquid smoke
1 tbsp smoked paprika
1 tbsp beetroot powder
1 1/2 tsp salt
1/2 tsp allspice powder
1/2 tsp garlic powder
1 1/2 cups vital wheat gluten
Pulverize tofu in blender until crumbled. Add all other ingredients except vital wheat gluten and puree until smooth. Stir together with wheat gluten until smooth. Don’t over-knead! Shape into ham form and wrap tightly in foil.
Ribs: For making ribs, shape into flatter, wider chops, and create separations by pressing the handle of a wooden spoon into the dough at regular intervals. Wrap in foil, making sure to press the foil firmly down into the spaces. Steam in instant pot for 40 minutes.
