We owe our discovery of this amazing meat alternative to a visit to Chicago in 2016, where we had an unforgettable lunch at the Chicago Diner. Their seitan bacon was fabulous, and it inspired us to investigate. Imagine our delight when we learned that seitan is insanely easy to make! It has opened the door to so many recipes that we had to dismiss in the past. Three years later, on a trip to Paris, we enjoyed vegan Boeuf Bourgninon at the wonderful Potager du Marais, and were inspired to take our seitan to the next level. Over time, we have come up with recipes that are healthier, more “whole food” in their composition.
