Korean-style Spicy Tofu

For sauce:

2/3 cup tomato sauce (small 213ml can works well)
1 tablespoon rice vinegar
1 tablespoon mirin
1 tablespoon dark soy sauce
1 tablespoon honey 
3+ tablespoons Gochujang paste (hot) 고추장
3+ cloves garlic, minced
1 large apple, cored and grated
3+ cm ginger, grated very fine

2 packages extra firm or pressed tofu, dried well
Flour or cornstarch 
Oil
Green onions


Assemble sauce and set aside.

Dry and cut tofu into medium-sized cubes, flour, and fry until golden brown. Reserve until ready to warm and serve.

When ready to serve, cook tofu and sauce until very hot. Garnish with very finely minced green onions.

Serve with jasmine rice, if desired.

Serves 3-4. If making for 2 people, use only one package of tofu and freeze 1/2 the prepared sauce.
