Wilkes house salsa

14 ounce can crushed tomatoes
14 ounce can diced tomatoes
2 tablespoons minced garlic
two medium sized chipotles (in adobo), chopped
2 tablespoons adobo sauce
2 teaspoons Mexican chile powder mix *
3/4 teaspoon salt
2 tablespoons lime juice
1 can whole corn, drained

Stir together thoroughly and refrigerate. Tastes best after at least a day for the flavours to assimilate.

*  The one we are using currently is actually a Peruvian-style chile mix, but any similar, flavourful seasoning of your choice will work fine.
