Walnut bread

1 ½ cups water
2 scant tablespoons yeast
¼ cup sugar
¼ cup melted butter
¼ cup milk
2 cups whole wheat flour
3–4 cups all purpose flour
½ teaspoon sea salt
150–200 grams coarsely chopped walnuts

Put yeast in water, allow to stand for 10 minutes. Stir together, then stir in sugar, butter, and milk. Stir in whole wheat flour, then turn out onto kneading board or into mixer with dough hook. Add salt, then gradually add all purpose flour, kneading until firm and slightly moist. knead in walnuts, then place in covered bowl to rise until doubled.

Shape dough into log and place in basket or baking tins for second rise. Preheat oven to 450° F. Bake on stone or in tins, 20–30 minutes until golden.
