Middle East / North Africa

We owe our beginning understanding of Arab cuisine to the excellent book by Habeeb Salloum, Classic Vegetarian Cooking from the Middle East and North Africa. This region has produced one of our favourite comfort foods (hummus) and is a great source of outstanding bean dishes. Salloum's book includes some simple recipes for the spice mixtures that give Arab cooking its great flavour—some of these can be found under condiments.
