Corn bread

¾ cup corn meal
1 cup white flour (unbleached)
¼ cup white sugar
3 teaspoons baking powder
½ teaspoon sea salt
1 cup milk
1 large egg
¼ cup melted butter

1 114 gram can mild diced chile (optional)
¾ cup grated sharp cheddar cheese (optional)


Preheat oven to 425℉.  Grease 8″ square pan well.

Assemble all ingredients quickly; do not over beat. Spoon into pan and bake for 20–25 minutes until done.
