Deep dish apple pie

filling
10 cups apples, peeled and sliced (gala or other firm, juicy apple)
1 cup sugar
¾ teaspoon cinnamon
½ teaspoon allspice
½ teaspoon clove
½ teaspoon freshly grated nutmeg
2 tablespoons flour

Place apple slices in covered saucepan and cook over medium heat until soft. Toss with sugar and spices until thoroughly coated. Add the flour and toss further. 

bottom crust
1 cup flour
 pinch salt 
¼ cup butter
water

To make bottom layer of crust, combine flour and salt. Cut in butter until it is thoroughly spread throughout flour mixture. Add water as necessary (not too much at once) while tossing with a fork to moisten. Turn out wet dough onto well-floured surface and roll out sufficiently to fill the bottom of a deep-dish pie plate.

top crust
½ cup flour
¼ cup brown sugar
¼ teaspoon cinnamon
¼ teaspoon allspice
¼ cup butter

To make crumble topping, combine dry ingredients and cut in butter until thoroughly combined.

Fill crust with filling and place pan in oven preheated to 450 ℉. Bake for ten minutes and remove.Turn oven down to 350 ℉ and spread crumble topping over top of pie. Return to oven for a further 30 minutes.
